Creamy tuna fettuccine

What you need

  • 400 grams fetuccine noodles
  • 2 tbsps. butter or margarine
  • 2 cans Campbell’s cream of mushroom soup
  • 2 packs Nestle All-purpose cream
  • 2 cans tuna flakes, drained of oil
  • 1/2 cup grated cheese
  • 1 cup mushrooms, sliced

Procedure

  1. Cook fetuccine noodles according to package instructions, making sure pasta is al dente, and not soggy.
  2. Heat butter over low heat.
  3. Add tuna flakes and mushrooms, and cook for 5 minutes.
  4. Pour cream of mushroom soup and all-purpose cream.  Simmer for another 5 minutes.
  5. Add the cheese last.
  6. Serves 6-8.

Beef salpicao

What you need

  • 1/2 kl. beef tenderloin, cut into cubes
  • 5 tsps. garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup Knorr seasoning
  • 1 pack Knorr Real Sarap
  • 3 tbsps. oil
  • 1 tsp. ground pepper
  • 1/2 cup of water

Procedure

  1. Combine beef, 2 tsps. of the minced garlic, soy sauce, Knorr seasoning and Knorr Real Sarap.  Make sure that the sauces cover the beef well.  Marinate for 30 minutes.
  2. In a large pan, heat cooking oil.
  3. Saute the remaining garlic.
  4. Remove beef from marinade mixture and add to the oil.  Brown all sides over medium heat, or cook until beef is tender.  This should take about 20 minutes.
  5. Add the marinade and let boil.
  6. Add water and simmer for about 10 minutes.
  7. Serves 4-5.

Paksiw na pata

What you need

  • 1 whole pata
  • 1 cup water
  • 1 cup vinegar
  • 1 cup soy sauce
  • 5 cloves of garlic, chopped
  • 3/4 cup brown sugar
  • banana blossoms
  • 3 pcs. bay leaf
  • 1 tbsp. peppercorns

Instructions

  1. Toss pata, vinegar, water and garlic into a pot.  Bring to a boil.  Cook until pork meat is tender, which should take about 45 minutes to an hour.
  2. Add the rest of the ingredients and simmer for another 15 minutes.
  3. Serves 5-6.

Chicken sotanghon

What you need

  • 1 pack vermicelli
  • 1 whole breast fillet, cut into strips
  • 2 cups chicken broth
  • 3 tbsps. cooking oil
  • 1 tsp. garlic, minced
  • 1 shallot, diced
  • 2-3 pcs. tengang daga (dried mushroom), soaked in water for 10 minutes then sliced
  • 2 tbsps. hibi (dried shrimps)
  • patis to taste
  • pepper

Instructions

  1. Pre-soak vermicelli in water to soften.  Set aside.
  2. In a pot, saute garlic and shallot.  Add hibi and tengang daga.
  3. Put chicken strips and cook for about 10 minutes, carefully adding patis.
  4. Add chicken broth.
  5. Upon reaching boiling point, add vermicelli.
  6. Simmer for 15 minutes.
  7. Pepper to taste.

Chicken pork adobo

What you need

  • ½ k. pork,
  • ½ k. chicken
  • 1 cup soy sauce
  • 1 cup vinegar
  • 2 cups water
  • 5 pcs. bay leaf
  • 2 tsps. garlic, minced
  • 1 pc. onion
  • Cooking oil
  • Pepper to taste

Instructions

  1. Saute garlic and onion.
  2. Add pork, soy sauce, vinegar, bay leaves and water.  Let boil and simmer for about fifteen minutes.
  3. Add chicken and cook for another ten minutes.
  4. In a separate wok, heat about 5 tbsps. of oil.  Remove pork and chicken and brown all sides over low heat.  Do this until pork and chicken begin oozing their own oil.
  5. Add the sauce mix and simmer for another five minutes.
  6. Serves 6-8.

Beef with broccoli

What you need

  • ½ kl. Sirloin beef
  • 5 tbsps. Oyster sauce
  • 5 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 whole head of broccoli, cut into serving pieces
  • ½ cup mushrooms, sliced
  • Water
  • 3 tbsps. cooking oil
  • 1 tsp. salt

Instructions

  1. Marinate beef in oyster sauce for about 30 minutes.
  2. Heat oil and sauté garlic and onion.
  3. Add marinated beef and about a cup of water.  Simmer until beef is tender.
  4. In a separate bowl, blanch broccoli until it turns a lighter shade of green.
  5. Add to beef and put in the sliced mushrooms.
  6. Simmer over low heat for 5 minutes.
  7. Serves 4-6.

Bistek Tagalog

What you need

  • ½ k. beef sirloin
  • 1 cup soy sauce
  • 12-15 pcs. calamansi, juiced
  • 1 tbsp. pepper
  • 1 large white onion, sliced into rings
  • 3 tbsps. canola oil
  • 1 ½ cups water

Procedure

  1. Marinate beef in soy sauce, calamansi juice and pepper for about an hour.
  2. In a large pan, heat oil.  Add beef and let both sides brown lightly.
  3. Add the remaining sauce and water.  Boil and simmer for 40 minutes or until tender.
  4. Toss in the onion rings and let sauce cover them.
  5. Serves 5-6.

Pork with tausi

What you need

  • ½ k. pork cubes, sliced about an inch
  • Water
  • Cooking oil
  • 3 medium tomatoes
  • 5 cloves garlic, diced
  • 1 medium onion, diced
  • 2 tbsps. black beans
  • 2 pcs. Tofu
  • Parsley
  • Salt and pepper to taste

Procedure

  1. Pre-cook pork cubes by boiling in water.  Set aside.
  2. Put oil in pan and lightly fry tofu, browning each side for about 3 minutes.  Do not overcook.  Cut each into small cubes.  Set aside.
  3. Using 2 tbsps. of oil, sauté garlic, onion, tomatoes and black beans.  Wait until tomatoes and black beans began juicing slightly.
  4. Add pork and enough water to cover, then simmer for about 10 minutes.
  5. Sprinkle with parsley.
  6. Serves 5-6.

Pork Asado

What you need

  • ½ k. pork, sliced thinly
  • 2 cups water
  • 4 tbsps. soy sauce
  • ½ cup brown sugar
  • 1 tbsp. salt
  • Peppercorns
  • Bay leaf
  • 2 tsps. garlic, minced
  • 1 pc. star anise
  • Dried mushrooms

Procedure

  1. Mix all ingredients in a large bowl and leave for about 30 minutes to let the pork absorb the spices.
  2. Transfer to a pan and let boil.
  3. Simmer for about 25 minutes or until pork is done.
  4. If sauce dries up, add more water.
  5. Serves 4-5.
